RGF HR Agent Recruitment is currently seeking a strategic and detail-oriented Purchasing (Cost Control & Inventory) Manager to lead the supply chain operations for a prestigious Japanese restaurant group based in Jakarta. This is a critical leadership role designed for a professional who thrives at the intersection of procurement excellence and rigorous financial oversight. The successful candidate will be responsible for ensuring the seamless flow of high-quality ingredients and materials while maintaining strict cost-efficiency across multiple outlets.

In this position, you will be the primary architect of the company’s sourcing strategy, particularly focusing on the unique requirements of Japanese cuisine. You will work closely with the culinary team and management to forecast demand, manage vendor relationships, and implement robust inventory control systems. Your goal is to minimize waste, optimize the Cost of Goods Sold (COGS), and ensure that every dish served meets the premium standards our customers expect. Tanggung Jawab

  • Develop and implement comprehensive procurement strategies to ensure timely delivery of high-quality ingredients and restaurant supplies.
  • Oversee daily cost control activities, including price comparisons, contract negotiations, and vendor performance evaluations.
  • Manage end-to-end inventory cycles, performing regular physical audits and reconciling variances within the POS and ERP systems.
  • Analyze Food & Beverage costs and COGS on a weekly and monthly basis to identify trends and areas for cost reduction.
  • Collaborate with the Executive Chef to source authentic Japanese ingredients while managing seasonal price fluctuations and availability.
  • Establish and maintain Standard Operating Procedures (SOPs) for receiving, storing, and issuing stock to minimize waste and theft.
  • Prepare detailed financial reports for senior management regarding purchasing budgets, price variances, and inventory turnover ratios.
  • Lead and mentor the purchasing and store teams to ensure high levels of accuracy and professional growth.

Kualifikasi

  • Bachelor’s Degree in Hospitality Management, Supply Chain, Logistics, or Finance.
  • Minimum of 5-8 years of experience in Purchasing and Cost Control, specifically within the F&B or Restaurant industry.
  • Deep knowledge of Japanese ingredients and international sourcing requirements is highly preferred.
  • Proven expertise in managing COGS and implementing effective waste management strategies.
  • Proficiency in using F&B management software, ERP systems (such as SAP or Oracle), and advanced Microsoft Excel.
  • Strong negotiation skills with a track record of achieving cost savings without compromising quality.
  • Excellent leadership abilities with experience managing diverse teams in a fast-paced environment.
  • Fluent in English and Bahasa Indonesia; proficiency in Japanese would be a significant advantage.
