We are looking for a Malay Traditional Pastry Chef to join our passionate culinary team in Permas Jaya, Johor. In this role, you will be instrumental in preserving and showcasing the rich heritage of Malay confectionery, creating a memorable experience for our guests through authentic, high‑quality pastries.
Your responsibilities will include crafting a diverse range of traditional kuih and pastries, from classic onde‑onde and kuih lapis to bespoke creations that celebrate seasonal ingredients. You will work closely with our kitchen management to develop recipes, standardize procedures, and ensure consistent taste and presentation across every batch.
Key duties involve managing daily production schedules, controlling inventory, and maintaining the highest standards of food safety and kitchen hygiene. You will also mentor junior staff, sharing your expertise in traditional techniques and inspiring a culture of continuous improvement.

Tanggung Jawab
- Prepare traditional Malay pastries such as kuih, onde‑onde, lapis, and other heritage sweets with consistency and excellence.
- Develop and refine recipes to maintain authentic taste while optimizing production efficiency.
- Manage daily inventory, order ingredients, and ensure the freshness and quality of all culinary supplies.
- Enforce food safety standards, hygiene protocols, and kitchen sanitation procedures.
- Train and mentor junior kitchen staff, sharing traditional techniques and best practices.
- Collaborate with management to design seasonal menus and special event offerings.
- Maintain kitchen equipment, perform routine checks, and address any operational issues promptly.
- Monitor cost control, minimize waste, and adhere to budgetary guidelines.
Kualifikasi
- Proven experience as a Pastry Chef or similar role, preferably with a focus on traditional Malay pastries.
- In‑depth knowledge of Malay culinary traditions, ingredients, and flavor profiles.
- Strong organizational and time‑management skills with the ability to handle high‑volume production.
- Certification in Food Safety or equivalent is highly advantageous.
- Creative flair with an eye for detail, presentation, and continuous improvement.
- Good communication and teamwork abilities to work effectively in a fast‑paced kitchen.
- Flexibility to work weekends, holidays, and varied shifts as required.
