As the Assistant Kitchen Manager, you will work closely with the Kitchen Manager to lead the back-of-house team, ensuring seamless kitchen operations during high-volume service. You will mentor junior staff, oversee inventory management, and ensure strict compliance with health and safety protocols. Tanggung Jawab

  • Assist the Kitchen Manager in overseeing day-to-day culinary operations and workflow efficiency.
  • Ensure high standards of food presentation, quality control, and consistency across all menu items.
  • Lead, train, and motivate the kitchen brigade to ensure excellent team performance and productivity.
  • Manage inventory levels, including ordering, stock rotation, and minimizing food waste to control costs.
  • Maintain strict adherence to HACCP standards and food safety regulations.
  • Monitor kitchen equipment performance and coordinate maintenance as needed.
  • Support the development of new menu items and seasonal promotions in collaboration with the executive culinary team.

Kualifikasi

  • Minimum 2-3 years of experience in a supervisory role within a reputable restaurant, hotel, or hospitality group.
  • Strong knowledge of kitchen operations, food preparation techniques, and culinary trends.
  • Proven ability to manage inventory, food costs, and labor productivity effectively.
  • Excellent leadership, problem-solving, and communication skills.
  • Willingness to be based in Samarinda, Kalimantan Timur.
  • Strong understanding of food safety, hygiene protocols, and workplace safety standards.
  • Ability to work in a high-pressure, fast-paced environment with a flexible schedule.
