Tanggung Jawab

  • Lead and supervise the banquet kitchen brigade, ensuring high standards of food quality and presentation.
  • Create and innovate seasonal banquet menus that align with the hotel's culinary direction and guest preferences.
  • Manage the preparation of large-scale Western banquets, ensuring timely service and flawless execution.
  • Monitor food costs and inventory levels to optimize profitability while minimizing waste.
  • Ensure strict adherence to hygiene, safety, and sanitation regulations (HACCP) at all times.
  • Collaborate with the F&B management team to coordinate with external caterers and internal events.
  • Conduct regular kitchen audits and training sessions for junior staff.

Kualifikasi

  • Culinary degree or diploma from a recognized institution.
  • Minimum 3-5 years of experience in Western Banquet cooking, preferably in a 5-star hotel environment.
  • Strong leadership and team management skills with the ability to work under pressure.
  • Passion for Western cuisine and creativity in menu development.
  • Valid Food Handler's Certificate and medical fitness certificate.
  • Excellent time management and organizational abilities.
  • Fluency in English; knowledge of additional languages is a plus.
