Tanggung Jawab
- Lead and oversee the daily operations of the breakfast buffet, ensuring 5-star quality and presentation.
- Manage, train, and mentor kitchen staff to maintain peak efficiency during high-volume morning service.
- Develop and execute creative, high-quality breakfast menu items that cater to international palates.
- Monitor food inventory levels, manage waste reduction, and oversee cost control measures.
- Ensure strict adherence to food safety, hygiene, and sanitation standards (NEA regulations) at all times.
- Coordinate closely with the Executive Chef to ensure seamless integration between breakfast and subsequent meal services.
- Maintain consistent quality control of all buffet stations, ensuring freshness and aesthetic appeal.
Kualifikasi
- Minimum 3-5 years of experience as a Sous Chef or Chef de Partie, preferably in a 5-star hotel environment.
- Strong knowledge of international breakfast cuisines and high-volume buffet preparation.
- Proven leadership skills with the ability to motivate and manage a diverse kitchen brigade.
- Excellent understanding of HACCP, food safety, and hygiene management systems.
- Strong organizational skills and the ability to work effectively under pressure in a fast-paced environment.
- Exceptional attention to detail and a commitment to maintaining luxury service standards.
- Formal culinary qualification or equivalent trade certification is highly preferred.
