Are you a culinary professional with a passion for seafood and a drive for excellence? TBI Group is currently seeking a skilled and dedicated Chef de Partie (CDP) to join our team at our premier seafood restaurant in Jakarta Raya. In this role, you will be the backbone of our kitchen operations, ensuring that every dish meets our high standards of quality, freshness, and presentation.

As a CDP, you will take ownership of your assigned section, mentoring junior staff and working closely with the Head Chef to innovate our menu and maintain seamless kitchen workflows. We are looking for a candidate who thrives in a fast-paced environment and possesses a deep understanding of seafood preparation, hygiene standards, and operational efficiency.

Tanggung Jawab

  • Oversee daily kitchen operations for a specific station, ensuring smooth service and high-quality output.
  • Prepare, cook, and present high-quality seafood dishes according to restaurant standards.
  • Supervise and mentor commis chefs and kitchen assistants to maintain team productivity.
  • Ensure compliance with all food safety, hygiene (HACCP), and sanitation regulations at all times.
  • Monitor inventory levels, manage food costs, and minimize wastage through efficient portion control.
  • Collaborate with the Head Chef to develop new menu items and seasonal specials.
  • Maintain equipment and ensure the kitchen area is organized and clean throughout service.

Kualifikasi

  • Minimum 2-3 years of experience as a Demi Chef or Chef de Partie, preferably in a seafood or fine-dining restaurant.
  • Strong knowledge of seafood preparation, handling, and cooking techniques.
  • Proven ability to lead and motivate a small team under pressure.
  • Deep understanding of food safety protocols and kitchen management best practices.
  • Excellent attention to detail and a creative flair for food plating.
  • Professional certification in Culinary Arts or related hospitality field is a plus.
  • Ability to work flexible hours, including weekends and public holidays.
