Tanggung Jawab

  • Lead and manage a designated kitchen section (e.g., hot kitchen, pastry, sushi, grill), ensuring smooth operations.
  • Prepare and cook a wide range of high-quality Western or Japanese dishes according to established recipes, standards, and guest requests.
  • Ensure consistent food quality, presentation, and portion control for all dishes prepared in your section.
  • Adhere strictly to all food safety, sanitation, and hygiene regulations (HACCP principles) to maintain a safe and clean working environment.
  • Supervise and mentor junior kitchen staff, fostering a positive and productive work atmosphere.
  • Monitor inventory levels for your section, minimize waste, and assist with ordering and stock rotation.
  • Collaborate effectively with the Head Chef and Sous Chef on menu planning, daily specials, and special events.
  • Maintain equipment cleanliness and report any maintenance issues promptly to ensure operational efficiency.

Kualifikasi

  • Proven experience (2+ years) as a Chef de Partie or Demi Chef de Partie in a reputable hotel, resort, or restaurant.
  • Demonstrable expertise in either Western (e.g., European, Mediterranean) or Japanese (e.g., Sushi, Izakaya) cuisine.
  • Solid understanding of advanced cooking techniques, food preparation, and kitchen operations.
  • Thorough knowledge of food safety, hygiene, and sanitation regulations (e.g., HACCP).
  • Ability to work effectively under pressure in a fast-paced kitchen environment while maintaining composure.
  • Strong leadership, communication, and team-working skills.
  • Culinary diploma or vocational certification from a recognized institution is highly preferred.
  • Flexibility to work various shifts, including evenings, weekends, and public holidays.
