Tanggung Jawab
- Lead and manage a specific kitchen section (e.g., hot, cold, pastry) with efficiency and precision.
- Prepare and cook all food items according to established recipes, quality standards, and portion controls.
- Ensure the consistent quality, taste, and presentation of dishes, with a focus on innovative Sarawak cuisine.
- Monitor and maintain kitchen hygiene, cleanliness, and food safety standards in line with regulations.
- Train, mentor, and supervise junior kitchen staff and commis chefs within your station.
- Manage inventory for your section, minimize waste, and assist with ordering and stock rotation.
- Collaborate with the Head Chef and Sous Chef on menu development and specials, especially incorporating local ingredients and culinary trends.
- Oversee the proper handling, storage, and rotation of food products to prevent spoilage.
Kualifikasi
- Proven experience of at least 2-3 years as a Chef de Partie or in a similar leadership role within a reputable kitchen environment.
- Strong foundational knowledge of culinary techniques, kitchen operations, and various cooking methods.
- Passion for and familiarity with Sarawak or regional Malaysian cuisine, with an innovative approach.
- Ability to work effectively under pressure in a high-volume, fast-paced kitchen setting.
- Excellent organizational, time management, and problem-solving skills.
- Strong leadership qualities and the ability to motivate and train a team.
- Possession of relevant culinary diploma, certification, or equivalent practical experience.
- Valid food handler's license and a strong understanding of HACCP principles and kitchen safety.
