Tanggung Jawab
- Lead and oversee daily operations of the Italian station, ensuring quality control and menu consistency.
- Prepare authentic Italian dishes including house-made pastas, risottos, and specialty sauces according to recipes.
- Supervise Commis Chefs and kitchen assistants to ensure efficient workflow and proper station maintenance.
- Monitor inventory levels and assist with food procurement, ensuring minimal wastage and adherence to food cost targets.
- Maintain strict compliance with health, safety, and hygiene regulations (HACCP) at all times.
- Ensure all plates are executed according to the restaurant’s presentation standards before leaving the pass.
- Collaborate with the Executive Chef to develop seasonal specials and refine existing menu items.
Kualifikasi
- Minimum of 3 years of experience as a Chef De Partie or Demi Chef in a reputable Italian restaurant.
- Deep understanding of authentic Italian ingredients, cooking techniques, and regional specialties.
- Proven ability to perform under pressure in a high-volume kitchen environment.
- Strong leadership skills with the ability to train and mentor junior kitchen staff.
- Excellent knowledge of food safety, kitchen sanitation, and equipment maintenance.
- Strong attention to detail and a creative approach to food presentation.
- Culinary degree or relevant certification is highly preferred.
