As a Chef De Partie, you will be the heartbeat of your station, ensuring that every dish served meets our high standards of quality, presentation, and taste. Tanggung Jawab

  • Lead and oversee daily operations of the Italian station, ensuring quality control and menu consistency.
  • Prepare authentic Italian dishes including house-made pastas, risottos, and specialty sauces according to recipes.
  • Supervise Commis Chefs and kitchen assistants to ensure efficient workflow and proper station maintenance.
  • Monitor inventory levels and assist with food procurement, ensuring minimal wastage and adherence to food cost targets.
  • Maintain strict compliance with health, safety, and hygiene regulations (HACCP) at all times.
  • Ensure all plates are executed according to the restaurant’s presentation standards before leaving the pass.
  • Collaborate with the Executive Chef to develop seasonal specials and refine existing menu items.

Kualifikasi

  • Minimum of 3 years of experience as a Chef De Partie or Demi Chef in a reputable Italian restaurant.
  • Deep understanding of authentic Italian ingredients, cooking techniques, and regional specialties.
  • Proven ability to perform under pressure in a high-volume kitchen environment.
  • Strong leadership skills with the ability to train and mentor junior kitchen staff.
  • Excellent knowledge of food safety, kitchen sanitation, and equipment maintenance.
  • Strong attention to detail and a creative approach to food presentation.
  • Culinary degree or relevant certification is highly preferred.
