Tanggung Jawab
- Oversee the daily operations of the Western and Cold Kitchen stations, ensuring smooth service flow.
- Prepare high-quality salads, appetizers, and Western entrees according to established recipes and plating standards.
- Monitor food inventory levels and assist with ordering to ensure optimal supply levels.
- Maintain strict hygiene and food safety standards in compliance with HACCP and local regulations.
- Collaborate with the sous chef and kitchen team to develop new seasonal menus and creative dishes.
- Ensure that all equipment in the station is cleaned and maintained according to safety protocols.
- Train and mentor junior kitchen staff and commis chefs to ensure consistent performance.
Kualifikasi
- At least 2-4 years of experience as a Commis Chef or Chef de Partie in a Western or fine-dining establishment.
- Solid understanding of Western culinary techniques and cold kitchen (garde manger) preparations.
- Strong knowledge of food safety, hygiene, and kitchen sanitation practices.
- Ability to work efficiently under pressure in a fast-paced environment.
- Excellent communication skills and the ability to work effectively within a diverse team.
- Flexibility to work shifts, including weekends and public holidays.
- Diploma or certification in Culinary Arts or related field is highly preferred.
