- Prepare, cook, and present authentic Nusantara seafood dishes with exceptional quality and consistency
- Develop and innovate new recipes while maintaining traditional cooking methods and flavor profiles
- Source and select the freshest local seafood and ingredients to ensure the highest quality dishes
- Manage kitchen operations, including inventory control, food safety compliance, and staff supervision
- Collaborate with the management team to create seasonal menus and special promotions
- Maintain a clean, organized, and efficient working environment in accordance with health and safety standards
- Train and mentor junior kitchen staff in traditional Nusantara cooking techniques
Kualifikasi
- Proven experience as a chef with specialization in Indonesian or Nusantara cuisine
- Deep knowledge of traditional Indonesian spices, cooking methods, and flavor profiles
- Culinary school certification or equivalent professional training preferred
- Strong understanding of seafood preparation, handling, and cooking techniques
- Ability to work efficiently in a fast-paced kitchen environment
- Excellent communication skills and ability to lead a kitchen team
