Are you a seasoned hospitality professional with a passion for operational excellence and team leadership? Concorde Hotel is looking for a dedicated Chief Steward to oversee our back-of-house operations in Shah Alam. In this critical role, you will be the backbone of our culinary and banquet success, ensuring that our kitchens, dishwashing areas, and storage facilities operate with uncompromising hygiene, efficiency, and safety standards.

As the Chief Steward, you will lead a dynamic team, manage inventory and equipment, and collaborate closely with Executive Chefs and F&B Managers to support the seamless execution of our daily operations and high-profile events. Tanggung Jawab

  • Manage and oversee daily operations of the Stewarding Department, including cleaning, sanitation, and kitchen equipment maintenance.
  • Supervise, train, and develop a team of stewards to ensure high performance and strict adherence to hotel policies.
  • Ensure compliance with all local health, safety, and hygiene regulations (HACCP/Food Safety standards).
  • Manage inventory and par levels for all operating supplies, chemicals, and kitchen equipment.
  • Coordinate with the culinary team to ensure timely availability of clean kitchenware for all F&B outlets and banquet events.
  • Monitor chemical usage and maintenance schedules for dishwashing machines and industrial kitchen equipment.
  • Prepare and manage department rosters, workflow schedules, and shift rotations to optimize labor costs.
  • Report directly to the Executive Chef regarding operational challenges, equipment repairs, and department performance.

Kualifikasi

  • Minimum 3-5 years of experience in a stewarding or kitchen management role within a hotel or high-volume catering environment.
  • Strong knowledge of HACCP, food safety, and sanitation protocols.
  • Proven leadership experience with the ability to motivate and manage a diverse team of employees.
  • Excellent communication and interpersonal skills.
  • Proficiency in inventory management software and basic computer skills for reporting.
  • Ability to work a flexible schedule, including weekends, public holidays, and rotating shifts as required by hotel operations.
  • Strong problem-solving skills and the ability to perform under pressure in a fast-paced environment.
