Are you passionate about authentic Italian cuisine and high-quality ingredients? Bottega Italiana Bali is looking for a talented and dedicated Cold Kitchen Chef to join our culinary team in Badung. As a member of our team, you will be responsible for preparing fresh, vibrant, and precise dishes that define our brand.

We pride ourselves on our 'farm-to-table' philosophy and commitment to traditional artisanal techniques. The ideal candidate will be detail-oriented, comfortable working in a fast-paced environment, and deeply knowledgeable about handling fresh produce, salads, appetizers, and cold platters with the utmost care for food safety and presentation excellence.

Tanggung Jawab

  • Prepare and assemble cold dishes including salads, appetizers, and antipasti according to standard recipes.
  • Ensure the highest standards of food presentation and quality control for every plate leaving the cold station.
  • Maintain strict hygiene, sanitation, and food safety standards (HACCP) throughout the kitchen area.
  • Manage inventory for the cold section, monitoring stock levels and minimizing waste.
  • Coordinate seamlessly with the hot kitchen and service staff to ensure timely delivery of orders.
  • Perform regular maintenance and cleaning of cold storage units, workstations, and kitchen equipment.
  • Assist the Head Chef with menu development and ingredient preparation as required.

Kualifikasi

  • Minimum 1-2 years of experience in a professional kitchen, specifically in a cold kitchen or garde manger role.
  • Strong knowledge of Italian cuisine and ingredient handling is highly preferred.
  • Understanding of food safety regulations and workplace health and safety protocols.
  • Ability to work under pressure in a fast-paced, high-volume environment.
  • Disciplined, reliable, and possessing a strong sense of urgency.
  • Excellent communication skills and a team-player attitude.
  • Ability to work on a rotational shift schedule including weekends and public holidays.
