Tanggung Jawab
- Oversee daily operations of the commissary kitchen, including food production, packaging, and distribution
- Manage inventory levels, procurement, and vendor relationships to ensure cost-effective and timely supply
- Enforce strict compliance with food safety regulations, sanitation standards, and HACCP protocols
- Supervise, train, and schedule commissary staff to maintain productivity and morale
- Coordinate menu planning, recipe standardization, and portion control to ensure consistency
- Monitor budgets, control operational costs, and implement cost-saving initiatives
- Conduct regular quality checks and implement continuous improvement processes
- Collaborate with other departments to align commissary output with client needs and company goals
Kualifikasi
- Bachelor's degree in Hospitality Management, Food Service, Culinary Arts, or a related field
- Minimum of 3–5 years of experience in commissary management, food service, or large-scale kitchen operations
- Proven leadership and team management skills with the ability to motivate diverse teams
- In-depth knowledge of food safety regulations, HACCP, and sanitation best practices
- Strong organizational, problem-solving, and decision-making abilities
- Proficiency in inventory management software and Microsoft Office applications
- Excellent communication and interpersonal skills
- Ability to work in a fast-paced environment and adapt to changing priorities
