Tanggung Jawab

  • Prepare and cook sushi, sashimi, and related Japanese dishes according to standard recipes and presentation styles.
  • Assist the Head Chef in managing daily kitchen operations, including prep, cooking, and service.
  • Maintain strict adherence to food hygiene and safety standards throughout the kitchen.
  • Ensure all mise en place is prepared and organized efficiently before service.
  • Monitor food inventory levels and assist in ordering stock to minimize waste.
  • Collaborate with the culinary team to develop and test new fusion menu items.
  • Train and mentor junior kitchen staff to ensure consistent quality standards.

Kualifikasi

  • Minimum 1-2 years of experience as a Demi Chef or Sushi Chef in a reputable restaurant.
  • Strong knowledge of Japanese cuisine, particularly sushi and sashimi preparation techniques.
  • Understanding of fusion concepts, specifically Japanese, Brazilian, and Peruvian influences.
  • Ability to work efficiently in a fast-paced, high-pressure kitchen environment.
  • Excellent attention to detail and commitment to food safety regulations.
  • Flexibility to work shifts, including weekends and public holidays.
  • Valid food hygiene certificates (e.g., WSQ Food Hygiene) are required.
