Tanggung Jawab
- Lead, mentor, and manage all kitchen staff, fostering a positive and productive work environment.
- Develop and innovate seasonal menus, ensuring a creative and diverse offering that aligns with brand identity and culinary trends.
- Oversee daily kitchen operations, including food preparation, cooking techniques, portion control, and presentation standards.
- Manage kitchen inventory, ordering, and supplier relationships to ensure optimal stock levels and cost-efficiency.
- Implement and enforce strict hygiene, sanitation, and food safety standards (HACCP principles) across all kitchen areas.
- Control food and labor costs, monitoring budgets and identifying areas for improvement without compromising quality.
- Ensure the consistent quality and exceptional presentation of all dishes served.
- Collaborate with the management team on strategic planning, marketing initiatives, and guest feedback to enhance the overall dining experience.
Kualifikasi
- Minimum of 5-7 years of progressive culinary experience, with at least 2-3 years in an Executive Chef or Head Chef role within a reputable restaurant or hospitality group.
- Proven track record in menu development, recipe creation, and kitchen management.
- Formal culinary education or equivalent professional certification is highly preferred.
- Strong leadership, communication, and interpersonal skills, with the ability to inspire and manage a diverse team.
- In-depth knowledge of various cooking methods, ingredients, equipment, and food safety regulations.
- Excellent understanding of food cost control, inventory management, and budgeting.
- Ability to work under pressure in a fast-paced environment while maintaining high standards.
- Fluency in English (written and spoken) is essential; proficiency in Bahasa Indonesia is a plus.
