- Oversee daily kitchen operations including menu planning, food preparation, and plating standards
- Implement rigorous food safety protocols and maintain HACCP compliance across all stations
- Lead, train, and motivate kitchen staff while fostering a culture of continuous improvement
- Manage inventory, procurement, and cost control to optimize profitability
- Collaborate with F&B team to develop seasonal menus aligned with guest preferences
- Ensure consistent quality control through regular taste testing and presentation audits
- Coordinate with vendors to source high-quality, sustainable ingredients
- Monitor kitchen equipment maintenance and implement preventive maintenance schedules
Kualifikasi
- Minimum of 5 years progressive experience in executive/sous chef roles within luxury hotels or fine dining establishments
- Culinary arts degree or equivalent professional certification required
- Proven track record in menu development, cost control, and kitchen staff management
- Deep knowledge of international cuisines and contemporary culinary trends
- Strong leadership abilities with experience in team training and development
- Certification in food safety and sanitation (HACCP preferred)
- Exceptional problem-solving skills and ability to perform under pressure
- Proficiency in kitchen management software and inventory systems
