Novotel Makassar is seeking a visionary and highly skilled Executive Chef to lead our culinary operations. As a key member of our leadership team, you will be responsible for defining the gastronomic identity of our hotel, ensuring world-class service standards, and driving profitability across all food and beverage outlets.

Tanggung Jawab

  • Develop and execute creative, high-quality menus for our restaurants, banquets, and catering events.
  • Manage daily kitchen operations, ensuring consistency in food quality, presentation, and preparation.
  • Maintain strict control over food costs, waste management, and inventory procurement to meet departmental targets.
  • Oversee kitchen hygiene, safety standards, and HACCP compliance to ensure a safe environment for staff and guests.
  • Recruit, train, mentor, and evaluate kitchen personnel to maintain high morale and high performance.
  • Monitor food industry trends and competitor offerings to ensure our culinary concepts remain modern and competitive.
  • Coordinate closely with the Food & Beverage Manager to optimize pricing and profit margins.

Kualifikasi

  • Minimum 5-7 years of experience in a senior culinary role within a 4-star or 5-star hotel/resort environment.
  • Strong background in international cuisine, fine dining, and large-scale banquet operations.
  • Proven leadership abilities with a successful track record in managing large, multi-cultural culinary teams.
  • Solid understanding of P&L management, food cost analysis, and budgeting.
  • Excellent knowledge of food safety regulations (HACCP certification is a strong advantage).
  • Strong communication skills in both Indonesian and English.
  • Relevant culinary degree or equivalent professional certifications.
