Tanggung Jawab

  • Oversee and manage all daily kitchen operations to ensure seamless workflow and top-tier dish consistency.
  • Develop and engineer profitable, creative menus that align with current food trends and brand identity.
  • Implement strict inventory management and portion control strategies to optimize food costs and reduce waste.
  • Lead, train, and mentor culinary team members to elevate their technical skills and professional growth.
  • Enforce and maintain the highest standards of food safety, hygiene, and sanitation (HACCP/ISO standards).
  • Collaborate with procurement teams to source high-quality ingredients while maintaining competitive pricing.
  • Monitor food quality and presentation, ensuring adherence to established standard operating procedures (SOPs).
  • Participate in periodic financial reviews to analyze food margin performance and implement corrective actions.

Kualifikasi

  • Minimum of 5-8 years of experience as an Executive Chef or Sous Chef in a high-volume professional kitchen.
  • Proven expertise in menu engineering, food costing, and inventory management software.
  • Strong leadership skills with the ability to motivate and manage diverse culinary teams.
  • In-depth knowledge of food safety regulations and quality assurance protocols.
  • Creative mindset with an ability to innovate while respecting traditional culinary foundations.
  • Excellent communication and problem-solving skills in high-pressure environments.
  • Degree or Diploma in Culinary Arts or related field is highly preferred.
  • Fluency in Indonesian and English is required to interact with stakeholders and staff.
