Tanggung Jawab
- Design, develop, and execute innovative menus that reflect seasonal trends and guest preferences.
- Lead, train, and mentor the kitchen team to ensure peak performance, consistency, and adherence to quality standards.
- Oversee daily kitchen operations, including inventory management, food cost control, and waste reduction.
- Ensure strict compliance with all health, safety, and sanitation regulations across all kitchen areas.
- Manage vendor relationships and procurement processes to source high-quality, sustainable ingredients.
- Coordinate with front-of-house management to ensure seamless communication and exceptional service delivery.
- Analyze financial reports and operational metrics to drive profitability while maintaining luxury standards.
Kualifikasi
- Minimum of 5-8 years of experience in a senior culinary role (Executive Chef or Sous Chef) within a high-end restaurant or luxury hotel.
- Strong background in food cost management, labor scheduling, and operational P&L responsibility.
- Exceptional leadership skills with a proven ability to manage and motivate diverse kitchen teams.
- Deep understanding of international culinary techniques, food science, and modern plating trends.
- Formal culinary education or degree in Hospitality Management is highly preferred.
- Excellent communication skills and the ability to handle high-pressure situations with composure.
- Certification in Food Safety and Sanitation (HACCP or equivalent).
