Tanggung Jawab

  • Develop and implement standardized recipes and cooking procedures for all Balkan Shawarma products
  • Oversee daily central kitchen operations, ensuring food quality, safety, and consistency across all locations
  • Manage and mentor kitchen staff, including hiring, training, and performance evaluation
  • Control food costs, inventory management, and waste reduction strategies
  • Create innovative menu items while maintaining the authenticity of Balkan cuisine
  • Implement and maintain HACCP and other food safety standards
  • Collaborate with the management team to support national expansion plans
  • Monitor kitchen equipment maintenance and ensure optimal operational efficiency

Kualifikasi

  • Minimum 5 years of experience as a Head Chef or Executive Chef in a high-volume kitchen environment
  • Proven experience in central kitchen operations or multi-location food service management
  • Deep knowledge of Balkan cuisine or similar culinary traditions is highly desirable
  • Certification in food safety and hygiene management
  • Strong leadership skills with experience managing diverse kitchen teams
  • Excellent understanding of cost control, inventory management, and supply chain operations
  • Creative culinary skills with ability to develop standardized recipes for mass production
  • Strong problem-solving abilities and attention to detail
