PT Nafeeza Radhya Bogatama is seeking an accomplished Executive Chef Specialist Masakan Minang to lead our culinary operations and showcase the authentic flavors of West Sumatran cuisine. As a master of traditional Minang techniques, you'll be responsible for crafting signature dishes like Rendang, Dendeng, Gulai, Ayam Pop, Gulai Tunjang, and Gulai Kepala Kakap while maintaining the highest standards of taste and presentation. This pivotal role requires deep cultural knowledge of Padang culinary heritage, innovative menu development, and the ability to train kitchen staff in authentic preparation methods. Tanggung Jawab
- Develop and execute authentic Minang cuisine menus reflecting traditional recipes and regional specialties
- Lead kitchen operations including food preparation, cooking, and quality control
- Train and mentor kitchen staff in traditional Minang cooking techniques
- Source authentic ingredients and maintain relationships with local suppliers
- Manage inventory, food costs, and kitchen budget efficiently
- Ensure strict compliance with food safety and hygiene regulations
- Collaborate with management to create seasonal promotions and events
Kualifikasi
- Minimum 5 years as Executive Chef or Head Chef with Minang cuisine specialization
- Expert knowledge of traditional Minang cooking methods and ingredients
- Proven ability to recreate authentic dishes (Rendang, Dendeng, Gulai, etc.)
- Culinary degree/diploma from accredited institution preferred
- Strong leadership skills with team management experience
- Creative menu development and cost control capabilities
- Excellent communication and problem-solving skills
