Tanggung Jawab
- Lead, mentor, and inspire the kitchen team to maintain high operational standards.
- Develop innovative menus that align with brand identity and market trends.
- Oversee daily kitchen operations, including inventory control, food safety, and waste reduction.
- Manage food cost and labor budgets to ensure maximum profitability.
- Ensure strict compliance with health, safety, and sanitation regulations (SFA/HACCP).
- Coordinate with procurement and vendors to source high-quality ingredients.
- Monitor food quality and presentation consistency across all service periods.
- Handle kitchen scheduling and provide ongoing training for culinary staff.
Kualifikasi
- Minimum 5-8 years of experience in a professional kitchen, with at least 2-3 years in a management capacity.
- In-depth knowledge of various culinary techniques and international food trends.
- Proven ability to manage kitchen financials, including P&L, food costing, and inventory.
- Strong leadership skills with the ability to manage diverse teams in a high-pressure environment.
- Excellent understanding of food hygiene and safety standards (Basic/Advanced Food Hygiene certifications required).
- Strong creative flair and attention to detail regarding food plating and menu design.
- Excellent communication and interpersonal skills.
