We are currently seeking a highly skilled and dynamic Food & Beverage Manager to join our operational team.

In this critical leadership role, you will be the mastermind behind our F&B strategy. You will oversee all aspects of the department, from fine dining restaurants and casual bars to extensive banquet operations and in-room dining. Your primary focus will be on creating exceptional, memorable gastronomic journeys for our guests while driving profitability and upholding the prestigious Novotel standards.

You will work closely with the Executive Chef to design innovative menus that showcase local Balinese flavors alongside international cuisine. You will lead, mentor, and inspire a large team, fostering a culture of excellence, creativity, and warm hospitality. Managing budgets, controlling costs, optimizing inventory, and negotiating with top-tier suppliers will be key to your success. Tanggung Jawab

  • Lead and manage all F&B operations, ensuring seamless delivery of service across restaurants, bars, banquets, and in-room dining.
  • Develop and implement strategic F&B marketing plans, promotions, and menu innovations to drive revenue growth.
  • Manage the department's financial performance, including budgeting, forecasting, cost control, and achieving EBITDA targets.
  • Establish and enforce rigorous standards for food quality, presentation, service, and hygiene (HACCP).
  • Recruit, train, appraise, and motivate a diverse team of F&B professionals, creating a positive and productive work culture.
  • Conduct regular competitor analysis and market research to anticipate trends and maintain a competitive edge.
  • Maintain strong relationships with suppliers, negotiating contracts to ensure high quality and best value.
  • Collaborate with the General Manager and Sales teams on corporate events, weddings, and special projects.

Kualifikasi

  • Minimum of 2 to 3 years of experience as an F&B Manager or Assistant F&B Manager in an upscale hotel or restaurant environment.
  • Proven leadership track record with the ability to manage, train, and develop a large and diverse team.
  • Strong analytical and financial management skills, with experience in P&L management, budgeting, and cost control.
  • In-depth knowledge of food and beverage service standards, menu engineering, and wine and spirit pairings.
  • Excellent command of English; additional language skills (e.g., Mandarin, Japanese) are highly regarded.
  • Hands-on management style with a keen eye for detail and a passion for guest satisfaction.
  • Bachelor's degree in Hospitality, Hotel Management, or equivalent professional experience.
  • Certified in HACCP or Occupational Health and Safety standards is a distinct advantage.
