Tanggung Jawab
- Lead the complete pre-opening kitchen setup, including equipment sourcing and workflow design.
- Develop, test, and implement a creative and commercially viable menu tailored to the Ubud market.
- Recruit, train, and manage all kitchen staff to ensure high standards of performance and professionalism.
- Maintain strict control over food costs, inventory management, and supplier relationships.
- Ensure 100% compliance with food safety, hygiene (HACCP), and sanitation standards.
- Oversee daily kitchen operations and coordinate effectively with front-of-house staff for seamless service.
- Continually innovate and update the menu based on seasonal availability and customer feedback.
Kualifikasi
- Minimum 3-5 years of experience as a Head Chef or Senior Sous Chef in a high-volume cafe or restaurant.
- Proven experience in a pre-opening environment is highly preferred.
- Strong leadership skills with the ability to build and motivate a new team from scratch.
- Deep understanding of both international culinary trends and local Balinese ingredients.
- Excellent organizational and financial management skills (food cost control).
- Ability to work under pressure and meet tight deadlines during the opening phase.
- Relevant culinary degree or professional certification.
