As our Head Chef, you will be the heart of our kitchen, responsible for maintaining our high standards of quality, consistency, and innovation. You will lead a talented team of chefs, manage inventory, and ensure that every dish served reflects the excellence of the Bumi Lembur Kuring brand. We are looking for a dedicated professional who thrives in a fast-paced environment and is committed to continuous culinary development and excellence.

Tanggung Jawab

  • Develop and execute seasonal menus specializing in authentic Sundanese dishes and premium seafood offerings.
  • Oversee daily kitchen operations, ensuring food quality, presentation, and safety standards are met at all times.
  • Manage and mentor a culinary team, fostering a positive work environment and promoting professional growth.
  • Control food costs and wastage through meticulous inventory management and supply chain coordination.
  • Ensure full compliance with health, safety, and hygiene regulations (HACCP).
  • Collaborate with the management team to innovate the menu and improve overall guest satisfaction.
  • Monitor kitchen productivity and optimize workflows to ensure efficient service during peak hours.

Kualifikasi

  • Minimum 5+ years of experience in a professional kitchen, with at least 2 years in a Head Chef or Sous Chef role.
  • Expert knowledge of Indonesian cuisine, specifically Sundanese culinary techniques.
  • Proven expertise in seafood preparation and handling.
  • Strong leadership skills with the ability to manage and motivate a large kitchen brigade.
  • Excellent understanding of food costing, inventory management, and kitchen P&L.
  • Relevant culinary degree or professional certification is highly preferred.
  • Ability to work a flexible schedule, including weekends and public holidays.
  • Strong command of Bahasa Indonesia; English proficiency is a plus.
