Tanggung Jawab

  • Develop and execute innovative menus that align with the brand identity of PT Makan Padang Pakai Tangan.
  • Manage end-to-end kitchen operations, including inventory control, food cost management, and waste reduction.
  • Lead, mentor, and inspire the kitchen brigade to ensure consistent dish quality and timely service.
  • Maintain the highest standards of food safety, sanitation, and hygiene in compliance with local regulations.
  • Collaborate with the management team to analyze food costs and optimize profit margins without compromising quality.
  • Conduct regular training sessions for staff regarding new recipes, culinary techniques, and safety protocols.
  • Oversee daily food preparation and final plating to ensure aesthetic consistency and guest satisfaction.

Kualifikasi

  • Minimum of 5 years of experience in a professional kitchen, with at least 2 years in a Head Chef or Executive Sous Chef role.
  • Strong background in Indonesian cuisine with a deep understanding of culinary techniques.
  • Proven ability to manage kitchen P&L, food costs, and inventory systems efficiently.
  • Excellent leadership and communication skills to motivate diverse team members.
  • Certification in Food Safety and Sanitation (HACCP or similar is a plus).
  • Strong creative flair and a commitment to maintaining high standards of excellence.
  • Ability to work under pressure, including weekends and public holidays.
