Join our family-run eco retreat in Bima (NTB) as Head Chef and lead our innovative plant-based and seafood buffet kitchen. We're seeking a passionate culinary professional who thrives in sustainable environments and values creating warm, home-like experiences for both staff and guests. Tanggung Jawab
- Develop and execute innovative plant-based and seafood buffet menus aligned with sustainability principles
- Lead kitchen operations including inventory management, cost control, and staff scheduling
- Maintain HACCP compliance and ensure food safety standards across all kitchen activities
- Train and mentor kitchen staff in plant-based cooking techniques and eco-friendly practices
- Collaborate with management to enhance guest dining experiences through seasonal menu rotations
- Oversee sourcing of sustainable local ingredients and reduce kitchen waste through creative utilization
- Manage kitchen budget and optimize resource allocation while maintaining quality standards
Kualifikasi
- Minimum 5 years culinary experience with 2+ years in Head Chef or senior leadership role
- Proven expertise in plant-based and seafood cuisine development
- Strong understanding of sustainable cooking practices and local Indonesian ingredients
- Certification in food safety management (HACCP equivalent)
- Exceptional leadership and team management skills in family-oriented environments
- Ability to work independently in remote locations with limited resources
- Proficiency in menu engineering and cost control for buffet operations
