As our Head Kitchen leader, you will be the engine behind our gastronomic excellence. You will oversee all kitchen functions, including menu development, cost control, team management, and maintaining the highest standards of food hygiene and quality. Tanggung Jawab

  • Oversee all daily culinary operations to ensure consistent quality, presentation, and taste.
  • Manage, mentor, and inspire a diverse kitchen team to achieve peak performance.
  • Design, cost, and implement creative seasonal menus that align with our bakery and grill concept.
  • Maintain strict inventory controls, manage food costs, and minimize waste to optimize profitability.
  • Ensure compliance with all health, safety, and hygiene regulations (HACCP standards).
  • Coordinate with procurement to source high-quality, fresh, and local ingredients.
  • Develop standardized recipes and training protocols for kitchen staff.
  • Oversee station preparation, execution during peak service hours, and post-service cleanup.

Kualifikasi

  • Proven experience as a Head Chef, Sous Chef, or Kitchen Manager (minimum 3-5 years).
  • Strong knowledge of grill techniques and bakery/pastry fundamentals.
  • Demonstrated ability to manage food cost percentages and kitchen budgets effectively.
  • Excellent leadership skills with the ability to manage and resolve conflicts in a high-pressure environment.
  • Deep understanding of food safety, hygiene regulations, and kitchen sanitization standards.
  • Strong organizational skills and the ability to multitask in a fast-paced environment.
  • Effective communication skills in both Indonesian and English.
  • Relevant culinary degree or certification is highly preferred.
