- Develop and curate the wine list for 1887 by André, ensuring alignment with culinary concepts and market trends.
- Oversee the management of the cellar, including inventory control, stock rotation, and meticulous procurement.
- Provide expert wine pairing recommendations to guests, enhancing their dining experience through professional storytelling.
- Conduct regular training sessions for service staff to elevate their knowledge of wine, spirits, and beverage service standards.
- Monitor and analyze beverage cost of sales, implementing strategies to maximize profitability while maintaining premium quality.
- Foster strong relationships with wine distributors, importers, and estate representatives to secure exclusive allocations.
- Maintain impeccable standards of glassware, presentation, and service etiquette in accordance with Raffles brand guidelines.
Kualifikasi
- Minimum of 5 years of experience as a Sommelier in a luxury hotel or Michelin-starred restaurant environment.
- Recognized Sommelier certification (e.g., Court of Master Sommeliers or WSET Level 3/Diploma) is essential.
- Proven track record in cellar management, inventory systems, and financial performance optimization.
- Exceptional interpersonal and communication skills, with the ability to engage guests from diverse backgrounds.
- Deep understanding of global wine regions, viticulture, and emerging beverage trends.
- Proficiency in POS systems and Microsoft Office; experience with cellar management software is a plus.
- Fluency in English; additional language skills are considered an asset.
