Tanggung Jawab
- Execute timely preparation of hot dishes according to standardized recipes and quality specifications
- Supervise kitchen staff, delegating tasks and ensuring efficient workflow during service hours
- Coordinate comprehensive ingredient preparation, including chopping, marinating, and portioning
- Implement proper storage protocols for all perishable and non-perishable ingredients
- Maintain strict adherence to HACCP principles and sanitation standards
- Monitor inventory levels and communicate supply requisitions to management
- Train junior staff on cooking techniques, equipment operation, and safety protocols
- Collaborate with pastry team for integrated menu execution during peak periods
Kualifikasi
- Minimum 3 years of experience in high-volume hot kitchen environments
- Proven leadership experience managing kitchen teams of 4+ staff members
- Certification in food safety and handling (e.g., HACCP, ServSafe)
- Expert knowledge of Indonesian and international cooking techniques
- Strong organizational skills with ability to prioritize multiple tasks
- Proficiency in inventory management and cost control principles
