Tanggung Jawab
- Assist in the daily preparation and execution of high-quality Japanese handrolls and sushi dishes.
- Lead kitchen operations and coordinate the culinary team during live open-bar service to ensure seamless service.
- Maintain the highest standards of food safety, hygiene, and kitchen cleanliness in compliance with local regulations.
- Manage inventory levels, including raw ingredients and packaging, to minimize waste and reduce costs.
- Train and mentor junior kitchen staff to ensure consistent product quality and adherence to recipes.
- Collaborate with the Head Chef on menu development and seasonal specials.
- Ensure all culinary equipment is cleaned, maintained, and in proper working order.
Kualifikasi
- Previous experience as a Sous Chef, Chef de Partie, or similar role in a high-volume restaurant or bar.
- Fluency in English (verbal and written) is essential for communication with international guests and management.
- A deep passion for Japanese cuisine, with a specific focus on sushi making and handroll techniques.
- Ability to work efficiently in a fast-paced, high-pressure environment while maintaining a calm demeanor.
- Strong leadership skills and the ability to motivate a kitchen team.
- Valid culinary certification or diploma is preferred.
