As the Kitchen Manager, you will be the backbone of our culinary team, ensuring that every dish served meets our high standards of quality, consistency, and food safety. We are looking for an individual who excels in high-pressure environments, possesses strong leadership skills, and has a proven track record of managing profitable kitchen operations. Tanggung Jawab

  • Lead, train, and mentor the kitchen brigade to ensure consistent food preparation and presentation.
  • Oversee daily kitchen operations, including inventory management, ordering, and stock rotation.
  • Implement and monitor strict food safety, hygiene, and sanitation standards (HACCP).
  • Manage food costs, minimize waste, and track labor productivity to maximize outlet profitability.
  • Develop and refine standardized recipes to ensure culinary excellence across the menu.
  • Coordinate with the service team to ensure seamless communication and timely food delivery.
  • Maintain kitchen equipment and coordinate repairs when necessary.

Kualifikasi

  • Minimum 3-5 years of experience in a leadership role within a professional kitchen (restaurant or hospitality sector).
  • Strong understanding of P&L management, food cost control, and inventory systems.
  • Excellent leadership, communication, and interpersonal skills.
  • Deep knowledge of food safety regulations and sanitary practices.
  • Proven ability to work effectively in a high-volume, fast-paced environment.
  • Flexible availability, including weekends and public holidays as required by mall operations.
  • Certification in culinary arts or hospitality management is highly preferred.
