Tanggung Jawab
- Oversee and coordinate all daily kitchen operations, ensuring efficiency, productivity, and adherence to established service standards.
- Supervise food preparation, cooking, and presentation to consistently maintain high standards of quality, taste, and visual appeal.
- Implement and rigorously enforce strict sanitation, hygiene, and safety standards in all kitchen areas, complying with local regulations.
- Manage inventory effectively, including accurate ordering, meticulous receiving, and proper storage of all food supplies to minimize waste and optimize cost control.
- Train, mentor, and evaluate kitchen staff, fostering a collaborative team environment and supporting professional development.
- Monitor food costs and kitchen expenditures, ensuring operations remain within budget and identifying areas for efficiency improvements.
- Assist in menu planning, development, and execution, incorporating customer feedback and staying abreast of culinary trends.
- Act as a primary point of contact for troubleshooting kitchen issues, resolving staff conflicts, and efficiently handling guest complaints related to food service.
Kualifikasi
- Proven experience of 3+ years as a Kitchen Supervisor, Sous Chef, or in a similar leadership role within a busy kitchen environment.
- Strong knowledge of advanced food preparation techniques, various cooking methods, and proper handling of kitchen equipment.
- Excellent understanding and practical application of food safety and sanitation regulations (HACCP certification is a significant advantage).
- Demonstrated ability to effectively lead, motivate, and manage a diverse culinary team in a high-pressure setting.
- Exceptional organizational skills, meticulous attention to detail, and a proactive problem-solving mindset.
- Ability to thrive and perform under pressure in a fast-paced, high-volume restaurant or hotel kitchen.
- Proficiency in inventory management software or systems and proven experience in cost control.
- High school diploma or equivalent required; a culinary degree or diploma from a recognized institution is highly preferred.
