Tanggung Jawab
- Direct and manage the complete daily operations of the pastry section, including production, quality control, and presentation of all baked goods, pastries, and desserts.
- Develop and execute innovative seasonal menus and special items that reflect current market trends and align with the corporate culinary vision.
- Manage inventory, ordering, and storage of ingredients, ensuring strict cost control and minimizing wastage to meet budget targets.
- Lead, train, and mentor a team of pastry cooks, fostering a culture of excellence, continuous improvement, and teamwork.
- Enforce rigorous compliance with food safety standards, sanitation protocols, and HACCP regulations.
- Collaborate closely with the Executive Chef and F&B teams to coordinate menus for events, banquets, and daily service.
- Conduct regular inspections of finished products to maintain consistency in flavor, texture, and visual appeal.
- Oversee the maintenance of pastry equipment and ensure a safe, organized, and efficient workspace.
Kualifikasi
- Bachelor's Degree in Culinary Arts, Hospitality Management, or a related discipline is preferred; equivalent practical experience will be considered.
- Minimum of 5 years of professional experience in a high-volume pastry kitchen, including 2 years in a supervisory or Head Pastry Chef role.
- Mastery of fundamental and advanced pastry techniques including baking, chocolates, confections, sugar work, and plated desserts.
- Proven experience in recipe development, cost analysis, and kitchen budget management.
- Exceptional leadership and team management skills with a track record of developing high-performing teams.
- Comprehensive knowledge of food safety standards, HACCP, and kitchen hygiene best practices.
- Creative flair with a strong aesthetic sense for presentation and a dedication to culinary perfection.
- Excellent communication and organizational skills, with the ability to thrive under pressure in a dynamic environment.
