In this role, you will be the heartbeat of our pastry kitchen, responsible for creating exquisite desserts and bakery items that define the guest experience.
As a Chef de Partie, you will work closely with the Executive Pastry Chef to maintain our high standards of quality, consistency, and artistic presentation. We are looking for an individual with a sharp eye for detail, a deep understanding of patisserie techniques, and the ability to thrive in a fast-paced, high-end environment. You will lead by example, mentoring junior staff and ensuring our culinary output meets the iconic standards Accor is famous for globally.
Tanggung Jawab
- Execute the daily preparation and production of high-quality pastries, breads, and plated desserts according to established recipes.
- Ensure the highest level of food hygiene, safety, and sanitation standards are maintained across the pastry section at all times.
- Supervise, train, and mentor junior pastry commis and apprentices to ensure consistent skill development.
- Manage inventory levels, monitor stock rotation, and minimize wastage to optimize food cost percentages.
- Collaborate with the Executive Chef to develop innovative seasonal menu items and creative dessert presentations.
- Oversee the setup of buffet displays and a la carte dessert stations to ensure aesthetic excellence.
- Maintain equipment performance and report maintenance requirements promptly to ensure a smooth workflow.
Kualifikasi
- Minimum 2-3 years of experience as a Pastry Chef de Partie or Commis 1 in a luxury hotel or fine-dining restaurant setting.
- Diploma or certification in Culinary Arts, Pastry, or a related field is highly preferred.
- Strong technical expertise in chocolate work, sugar craft, dough preparation, and classical French pastry.
- Demonstrated ability to manage high-volume production while maintaining impeccable detail and quality.
- Solid understanding of food safety regulations, HACCP protocols, and cost-control measures.
- A creative mindset with a genuine passion for modern pastry trends and flavor profiles.
- Excellent communication skills and the ability to work effectively within a multicultural kitchen team.
