Jawara Bakery is looking for a dynamic Pre-Opening Operations Manager to spearhead the launch of our exciting new Kopitiam and Café venture in Medan. This is a unique opportunity for an experienced leader to shape the operational foundation of a growing F&B brand.

In this pivotal role, you will be responsible for overseeing the entire pre-opening phase, ensuring that every detail—from staffing and training to vendor selection and compliance—is executed flawlessly. We are seeking a strategic thinker who thrives in fast-paced environments and understands the nuances of the Indonesian market. If you have a proven track record of successfully opening restaurants, casual dining outlets, or coffee shops, we want to hear from you.

Tanggung Jawab

  • Develop and implement comprehensive pre-opening operational plans and timelines for the new Kopitiam and Café.
  • Oversee the recruitment, interviewing, and onboarding process to build a high-performing team.
  • Establish Standard Operating Procedures (SOPs) for kitchen, service, and back-of-house operations.
  • Manage vendor negotiations, procurement, and quality control for food and beverage supplies.
  • Coordinate with marketing and branding teams to ensure a successful launch strategy.
  • Ensure full compliance with local government regulations, health, safety, and hygiene standards.
  • Manage the initial operational budget and monitor cash flow to ensure financial stability during the launch.

Kualifikasi

  • Minimum of 3-5 years of experience in operations management, specifically in opening new F&B outlets.
  • Demonstrated experience in managing Kopitiams, Cafés, restaurants, or food courts.
  • Strong leadership and interpersonal skills with the ability to motivate and train staff.
  • In-depth knowledge of food safety standards, HACCP, and local hospitality regulations.
  • Excellent organizational and time management skills with a keen eye for detail.
  • Proficiency in using POS systems and operational management software.
  • Valid driver’s license is preferred.
