In this role, you will be the driving force behind our menu evolution, blending traditional Japanese culinary arts with modern market trends.

We are looking for a visionary professional who thrives in a kitchen-laboratory environment, capable of transforming concepts into standardized recipes that delight our customers and optimize operational efficiency. If you have a deep understanding of Japanese ingredients, seasoning techniques, and supply chain management, we want to hear from you.

Tanggung Jawab

  • Develop and innovate high-quality Japanese menu items from concept to commercialization.
  • Conduct comprehensive market research to identify emerging F&B trends in the Japanese culinary landscape.
  • Manage the full product trial lifecycle, including sensory testing and cost analysis.
  • Develop and document precise standard recipes (SOPs) to ensure consistency across all outlets.
  • Collaborate closely with operations and procurement teams to ensure seamless implementation of new dishes.
  • Source high-quality ingredients while maintaining cost-effectiveness and strict quality control.
  • Conduct staff training and kitchen demonstrations to ensure the successful rollout of new menu items.

Kualifikasi

  • Minimum of 3-5 years of experience in a professional kitchen, specifically focusing on Japanese cuisine.
  • Deep technical knowledge of Japanese cooking techniques (sushi, ramen, izakaya, etc.).
  • Proven track record in R&D, product development, or culinary management.
  • Strong understanding of food safety, hygiene standards (HACCP), and kitchen workflow.
  • Proficiency in recipe costing, food inventory management, and profit & loss awareness.
  • Creative problem-solving skills with the ability to work under tight deadlines.
  • Excellent communication and leadership skills to facilitate cross-departmental collaboration.
