Tanggung Jawab
- Develop and innovate high-quality Japanese menu items from concept to commercialization.
- Conduct comprehensive market research to identify emerging F&B trends in the Japanese culinary landscape.
- Manage the full product trial lifecycle, including sensory testing and cost analysis.
- Develop and document precise standard recipes (SOPs) to ensure consistency across all outlets.
- Collaborate closely with operations and procurement teams to ensure seamless implementation of new dishes.
- Source high-quality ingredients while maintaining cost-effectiveness and strict quality control.
- Conduct staff training and kitchen demonstrations to ensure the successful rollout of new menu items.
Kualifikasi
- Minimum of 3-5 years of experience in a professional kitchen, specifically focusing on Japanese cuisine.
- Deep technical knowledge of Japanese cooking techniques (sushi, ramen, izakaya, etc.).
- Proven track record in R&D, product development, or culinary management.
- Strong understanding of food safety, hygiene standards (HACCP), and kitchen workflow.
- Proficiency in recipe costing, food inventory management, and profit & loss awareness.
- Creative problem-solving skills with the ability to work under tight deadlines.
- Excellent communication and leadership skills to facilitate cross-departmental collaboration.
