Are you a visionary culinary expert with a passion for process engineering? PT Senang Ganyang Lapar is seeking a highly skilled R&D Manager to lead our culinary innovation team in Bandung. In this pivotal role, you will be the bridge between creative gastronomy and operational scalability, ensuring that our chef-driven products maintain their artisanal quality while meeting the rigorous demands of mass production.
As our R&D Manager, you will oversee the entire lifecycle of food product developmentāfrom initial concept and bench-top testing to full-scale commercialization. You will work closely with executive chefs, supply chain managers, and quality assurance teams to optimize our kitchen workflows, reduce food waste, and implement cost-effective ingredient sourcing strategies. Tanggung Jawab
- Lead the end-to-end R&D process for new food products, ensuring alignment with brand identity and market trends.
- Standardize culinary processes to ensure consistency and quality control across all operational outlets.
- Collaborate with cross-functional teams to engineer scalable production methods that maximize kitchen efficiency.
- Conduct sensory evaluations and pilot testing to refine taste, texture, and nutritional profiles.
- Manage the R&D budget, including ingredient sourcing, food cost analysis, and waste reduction initiatives.
- Maintain compliance with all food safety, hygiene, and regulatory standards (BPOM, Halal).
- Train kitchen staff on new product preparation techniques and menu implementation protocols.
Kualifikasi
- Bachelorās degree in Food Science, Culinary Arts, Food Technology, or a related field.
- Minimum 5-7 years of experience in R&D or Product Development within the F&B or food manufacturing industry.
- Deep understanding of food chemistry, preservation techniques, and large-scale culinary production.
- Strong analytical skills with proficiency in Microsoft Excel and food costing software.
- Proven ability to bridge the gap between creative menu design and operational execution.
- Excellent leadership skills with experience managing multidisciplinary teams.
- Strong communication skills in both Bahasa Indonesia and English.
