Tanggung Jawab

  • Lead and oversee daily kitchen station operations, ensuring exceptional food quality, taste, and plating.
  • Collaborate with the Head Chef to develop and refine seasonal menus, incorporating local ingredients and innovative fermentation techniques.
  • Train, mentor, and supervise junior cooks, fostering a culture of discipline, teamwork, and continuous improvement.
  • Manage inventory levels, order supplies efficiently, and minimize waste to ensure cost-effective kitchen operations.
  • Maintain the highest standards of hygiene, sanitation, and safety in accordance with HACCP guidelines.
  • Execute and innovate fermentation processes (kimchi, miso, kombucha, sourdough, etc.) to enhance the depth of flavors.
  • Ensure all dishes meet the restaurant's specifications and guest expectations before every service.
  • Stay updated on global culinary trends and integrate new cooking techniques into the evolving menu.

Kualifikasi

  • Minimum of 3–5 years of professional cooking experience, with at least 1 year in a senior or supervisory role.
  • Culinary degree or diploma from a recognized culinary institute is highly preferred.
  • Extensive knowledge of both Western and Indonesian cuisines, with a strong understanding of flavor profiles and pairings.
  • Proven hands-on experience with fermentation, pickling, curing, or other preservation techniques.
  • Strong leadership and communication skills with the ability to motivate a team under pressure.
  • Excellent organizational skills, time management, and meticulous attention to detail.
  • A keen palate, genuine passion for from-scratch cooking, and a desire to learn continuously.
  • Willingness to live and work in Ubud, Bali, and work flexible hours including weekends and holidays.
