Are you a visionary culinary artist with a passion for exquisite desserts? Dharma Uluwatu is seeking a highly skilled and creative Senior Pastry Chef to lead our pastry department in the heart of beautiful Bali. In this role, you will define the dessert experience for our guests, combining traditional techniques with innovative flavors inspired by the island's tropical bounty.

As our Senior Pastry Chef, you will work in a stunning coastal environment, managing production, ensuring top-tier quality control, and mentoring our culinary team. We are looking for an individual who thrives under pressure, stays ahead of global pastry trends, and is committed to delivering world-class service in a luxury resort setting.

Tanggung Jawab

  • Design, develop, and execute creative pastry menus, dessert platters, and seasonal specials.
  • Oversee daily production in the pastry section, ensuring consistency, quality, and strict adherence to food safety and hygiene standards (HACCP).
  • Manage inventory, order supplies, and control food costs to optimize department profitability.
  • Train, mentor, and inspire junior kitchen staff to foster a culture of excellence and professional development.
  • Collaborate with the Executive Chef to align pastry offerings with overall restaurant and resort concepts.
  • Manage the presentation of all plated desserts and pastries to ensure they meet our luxury brand standards.
  • Develop unique bakery items, breads, and afternoon tea concepts that elevate the guest experience.

Kualifikasi

  • Minimum 3-5 years of professional experience in a luxury resort or high-end dining pastry environment.
  • Strong technical expertise in chocolate work, sugar craft, plating techniques, and bread production.
  • Proven leadership skills with the ability to manage and motivate a diverse culinary team.
  • Creative mindset with a deep understanding of flavor profiles and aesthetic presentation.
  • Excellent knowledge of food cost management, waste reduction, and inventory control systems.
  • Willingness to relocate to or work in the Uluwatu, Bali area.
  • Professional certification in Culinary Arts or Pastry and Baking is highly preferred.
  • Fluency in English and Bahasa Indonesia is an advantage.
