We are currently seeking a highly skilled and creative Senior Sous Chef or Head Chef to join our team in Jakarta Raya. As the leader of our kitchen brigade, you will be responsible for defining the gastronomic identity of our establishment, ensuring consistent high-quality output, and mentoring a team of dedicated cooks. We are looking for an individual who is not only a master of flavor profiles but also a disciplined kitchen manager who can optimize operations, maintain strict food safety standards, and manage food costs effectively. Tanggung Jawab
- Develop and refine authentic Nusantara menus with a premium presentation focus.
- Oversee daily kitchen operations, ensuring workflow efficiency and adherence to high-quality standards.
- Manage inventory, ingredient sourcing, and vendor relationships to minimize waste and optimize food costs.
- Mentor, train, and inspire kitchen staff to maintain a culture of excellence and teamwork.
- Ensure full compliance with all health, safety, and hygiene regulations (HACCP/Sanitation).
- Maintain consistent quality control across all meal preparations and plate presentations.
- Collaborate with management to drive menu innovation based on seasonal availability and customer feedback.
Kualifikasi
- Minimum of 5 years of experience in a professional kitchen, with at least 2 years in a leadership role (Sous Chef or Head Chef level).
- Deep expertise in Indonesian (Nusantara) culinary techniques, spices, and regional cuisines.
- Proven track record in managing food costs (COGS) and labor scheduling.
- Strong leadership and communication skills, capable of managing a diverse team in a high-pressure environment.
- Certification in Food Safety and Sanitation is highly preferred.
- Degree or Diploma in Culinary Arts or related field is a significant advantage.
- Proficiency in English and Indonesian, with a keen eye for detail and creative flair.
