As a Senior Sous Chef, you will be the backbone of our kitchen operations, balancing the art of high-quality food preparation with the science of cost control and team management. You will work closely with the Head Chef to maintain the brand's reputation for excellence, ensuring every 'bungkus' served is a testament to our commitment to quality. Tanggung Jawab

  • Lead and manage daily kitchen operations to ensure peak efficiency and food quality.
  • Supervise food preparation and presentation, ensuring all dishes meet Bungkus Kaw Kaw’s standardized recipes.
  • Monitor and control food costs, inventory levels, and wastage to maximize profitability.
  • Mentor, train, and supervise junior kitchen staff to maintain a high-performing and motivated team.
  • Maintain rigorous standards of kitchen hygiene, sanitation, and safety in compliance with Halal and HACCP regulations.
  • Coordinate with the procurement team to ensure the highest quality of raw materials and ingredients.
  • Oversee kitchen scheduling and performance reviews for the culinary team.
  • Execute speed-of-service protocols without compromising on the taste or integrity of the food.

Kualifikasi

  • Candidate must possess at least a Diploma or Professional Degree in Culinary Arts or equivalent.
  • Minimum of 5-8 years of experience in a professional kitchen, with at least 2 years in a supervisory role.
  • Strong expertise in Malaysian cuisine and high-volume casual dining environments.
  • Proven track record in kitchen management, including inventory and cost control.
  • Excellent leadership, communication, and interpersonal skills.
  • Ability to work shifts, weekends, and public holidays in a fast-paced retail environment.
  • Deep understanding of Halal food preparation standards and food safety protocols.
