In this pivotal leadership role, you will work directly alongside our Head Chef to meticulously uphold the integrity of our Mediterranean-inspired menu. Every dish at Fotia tells a story, reflecting the rich culinary traditions and bold, sun-drenched flavors of Greek cuisine. As the Sous Chef, you will be a natural leader and mentor, capable of inspiring, training, and managing a diverse and passionate kitchen team. Your exceptional organizational skills will be crucial in driving smooth and efficient service, maintaining strict portion control, managing inventory and supplier relationships, and upholding the highest standards of kitchen hygiene and safety as mandated by the Singapore Food Agency (SFA). Tanggung Jawab

  • Assist the Head Chef in menu planning, recipe creation, and maintaining food cost targets to ensure profitability and seasonal menu variety.
  • Manage daily kitchen operations including food preparation, cooking, plating, and quality control to exacting restaurant standards.
  • Lead, train, and mentor the junior kitchen team, fostering a positive culture of excellence, teamwork, and culinary passion.
  • Ensure full compliance with health, safety, and hygiene regulations (SFA standards, HACCP principles).
  • Oversee inventory management, perform regular stock takes, and maintain strong vendor relationships to guarantee the freshest ingredients.
  • Support the Head Chef in managing the kitchen budget, minimizing waste, and optimizing resource allocation.
  • Step into the Head Chef role in their absence, taking full ownership of service delivery and kitchen morale.
  • Contribute creative ideas for seasonal specials and menu enhancements to delight our guests.

Kualifikasi

  • Minimum of 3–5 years of proven experience as a Sous Chef or Junior Sous Chef in a high-volume, quality-focused restaurant environment.
  • Deep knowledge and passion for Greek and Mediterranean cuisines are highly advantageous.
  • Degree or Diploma in Culinary Arts, or equivalent substantial professional kitchen experience.
  • Strong leadership, communication, and interpersonal skills with the ability to motivate a team.
  • Demonstrated ability to thrive under pressure and manage multiple priorities during peak service hours.
  • Solid understanding of food safety standards, HACCP, and SFA regulations in Singapore.
  • Creative mindset with a genuine passion for culinary innovation and seasonal cooking.
  • Valid Basic Food Hygiene Certification (Singapore) is a must.
