Tanggung Jawab

  • Prepare and cook a diverse range of meals according to Marriott recipes and banquet specifications, including special dietary requests and substitutions.
  • Regulate and monitor the temperature of all cooking equipment, including ovens, broilers, grills, and roasters, to ensure optimal food quality and safety.
  • Supervise and coordinate the activities of kitchen staff, ensuring efficient workflow and proper delegation of tasks during service.
  • Pull food from freezer storage to thaw, prepare ingredients, and execute complex recipes for large-scale catering events.
  • Ensure strict adherence to HACCP guidelines, health codes, and sanitation standards throughout the kitchen.
  • Manage inventory levels, including ordering supplies and minimizing food waste to control operational costs.
  • Train junior chefs and kitchen assistants on proper cooking techniques and presentation standards.

Kualifikasi

  • Minimum of 2-3 years of experience as a Sous Chef or in a similar leadership role within a high-volume hotel or catering kitchen.
  • Culinary degree or diploma from a recognized culinary institution is preferred.
  • Strong knowledge of food safety regulations, including HACCP and local health codes.
  • Proven ability to work in a fast-paced environment while maintaining composure under pressure during peak hours.
  • Excellent leadership, communication, and interpersonal skills.
  • Physical stamina and the ability to stand for extended periods and lift heavy items.
