Tanggung Jawab
- Manage the day-to-day operations of the cold kitchen, ensuring quality and presentation standards are met.
- Prepare high-quality salads, cold appetizers, dressings, and garnishes in accordance with company recipes.
- Monitor food inventory levels, manage food waste, and conduct regular stock checks for the cold station.
- Adhere strictly to food safety and hygiene regulations (SFA standards) at all times.
- Supervise and train junior kitchen staff to ensure consistency in food preparation and station workflow.
- Collaborate with the Executive Chef on menu development and seasonal recipe adjustments.
- Maintain equipment cleanliness and ensure a well-organized workspace.
Kualifikasi
- Proven experience as a Sous Chef, Chef de Partie, or a similar role in a professional kitchen environment.
- Strong knowledge of cold kitchen techniques, food safety, and sanitation practices.
- Ability to work a 6-day, 8-hour shift schedule consistently.
- Excellent communication and leadership skills to motivate the kitchen team.
- A positive attitude, reliability, and the ability to work under pressure during peak service hours.
- Possession of a valid Food Hygiene Certification is highly preferred.
- Strong attention to detail and a creative approach to food presentation.
