- Develop and execute authentic Indonesian menu items aligned with fine dining standards
- Lead kitchen operations during service shifts, ensuring food quality and presentation excellence
- Train and mentor junior kitchen staff in Indonesian culinary techniques
- Manage inventory, ordering, and cost control for kitchen supplies
- Implement and maintain strict food safety and hygiene protocols
- Collaborate with Head Chef on menu innovation and seasonal specials
- Oversee kitchen workflow during peak hours to ensure efficiency
- Source and select high-quality Indonesian ingredients
Kualifikasi
- Minimum 3 years as Sous Chef in fine dining or high-volume restaurant
- Expert knowledge of Indonesian cuisine and traditional cooking methods
- Proven leadership experience managing kitchen teams
- Strong understanding of food safety regulations (HACCP)
- Culinary degree or professional certification preferred
