Tanggung Jawab
- Oversee daily kitchen operations and ensure food quality standards are consistently met.
- Supervise, mentor, and train junior kitchen staff and commis chefs.
- Collaborate with the Executive Chef on menu development, seasonal specials, and food cost management.
- Maintain strict compliance with hygiene, safety, and sanitation regulations (HACCP).
- Manage inventory levels, ingredient ordering, and minimize food wastage.
- Ensure smooth communication between front-of-house and back-of-house teams.
- Monitor portion control and presentation to ensure artistic and financial consistency.
Kualifikasi
- Minimum of 3-5 years of professional culinary experience in a high-volume kitchen environment.
- Strong leadership skills and the ability to manage a diverse team under pressure.
- In-depth knowledge of food costing, inventory management, and kitchen administrative tasks.
- Comprehensive understanding of food safety and sanitation protocols.
- Proven ability to create innovative, high-quality menus and dishes.
- Excellent communication skills and a collaborative, 'can-do' attitude.
- Formal culinary education or professional certification is highly regarded.
