Tanggung Jawab

  • Oversee daily kitchen operations and ensure food quality standards are consistently met.
  • Supervise, mentor, and train junior kitchen staff and commis chefs.
  • Collaborate with the Executive Chef on menu development, seasonal specials, and food cost management.
  • Maintain strict compliance with hygiene, safety, and sanitation regulations (HACCP).
  • Manage inventory levels, ingredient ordering, and minimize food wastage.
  • Ensure smooth communication between front-of-house and back-of-house teams.
  • Monitor portion control and presentation to ensure artistic and financial consistency.

Kualifikasi

  • Minimum of 3-5 years of professional culinary experience in a high-volume kitchen environment.
  • Strong leadership skills and the ability to manage a diverse team under pressure.
  • In-depth knowledge of food costing, inventory management, and kitchen administrative tasks.
  • Comprehensive understanding of food safety and sanitation protocols.
  • Proven ability to create innovative, high-quality menus and dishes.
  • Excellent communication skills and a collaborative, 'can-do' attitude.
  • Formal culinary education or professional certification is highly regarded.
