Deskripsi Pekerjaan

The Sous Chef Pastry is responsible for assisting the Executive Pastry Chef and Executive Chef in overseeing all pastry and bakery operations. This role demands a creative leader who excels in both high-volume production and intricate, artistic dessert creation. You will ensure that all pastry items meet the strict standards of Accor, providing an unforgettable culinary experience for our guests.

As a key member of the culinary team, you will manage the daily workflow of the pastry kitchen, including inventory control, staff scheduling, and menu development. You are expected to mentor junior chefs, maintain a clean and organized workspace, and implement cost-control measures without compromising on quality. We are looking for a dedicated professional who is passionate about the art of baking and committed to culinary excellence.

Tanggung Jawab

  • Assist the Executive Pastry Chef in developing and updating seasonal menus and special dessert concepts.
  • Supervise and train the pastry kitchen staff to ensure high performance and adherence to recipes.
  • Oversee the daily preparation of pastries, breads, cakes, and chocolates to ensure consistency in taste and presentation.
  • Manage stock levels of ingredients, monitor waste, and place orders with suppliers to minimize shortages.
  • Ensure strict compliance with hygiene, safety, and sanitation regulations at all times.
  • Conduct regular quality checks on finished products before they are served to guests.
  • Collaborate with the front-of-house team to understand guest feedback and adapt offerings accordingly.

Kualifikasi

  • Minimum of 3-5 years of experience in a similar Sous Chef or Pastry Chef role within a luxury hotel or high-end restaurant.
  • Culinary degree or diploma from a recognized culinary institution is preferred.
  • Strong knowledge of international pastry techniques, including chocolate work, sugar art, and pastry decoration.
  • Proven leadership skills with the ability to motivate and manage a diverse kitchen team.
  • Excellent organizational and time-management skills to handle high-pressure environments.
  • Fluent in English and Indonesian (spoken and written) for effective communication.
  • Certification in Food Safety and Hygiene is required.
