As our Sous Chef Pastry, you will be the backbone of our pastry department. You will oversee daily operations, mentor our junior pastry chefs, and ensure that every item leaving the kitchen meets our rigorous quality and aesthetic standards. We are looking for a hands-on leader who is comfortable in a high-volume environment and possesses a deep understanding of French pastry techniques and modern dessert trends.

Tanggung Jawab

  • Lead and oversee daily pastry kitchen operations to ensure production targets are met.
  • Supervise, coach, and develop a team of pastry cooks and apprentices to maintain high performance.
  • Ensure consistent quality, presentation, and flavor profiles for all desserts, breads, and pastries.
  • Maintain strict compliance with food safety, hygiene, and sanitation standards (HACCP).
  • Manage inventory, monitor stock levels, and minimize waste through efficient ingredient utilization.
  • Collaborate with the Executive Chef to develop seasonal menus and innovative dessert concepts.
  • Monitor and control food costs while maintaining quality standards.
  • Oversee maintenance of kitchen equipment and report any operational issues.

Kualifikasi

  • Minimum 3-5 years of experience in a pastry leadership role within a high-end restaurant or luxury hotel.
  • Proven expertise in French pastry techniques, chocolate work, and bread production.
  • Strong understanding of food cost control and inventory management systems.
  • Excellent leadership skills with the ability to mentor and inspire a multicultural kitchen team.
  • Relevant certification or degree from a reputable culinary academy.
  • Deep knowledge of food safety regulations and sanitation best practices.
  • Ability to work a flexible schedule, including weekends and public holidays.
  • Fluency in Indonesian and basic professional English proficiency.
